I’m not sure if I ever shared this here before, but my name is Cammi and I’m a very picky eater. I most often tell people that I eat like a 10-year-old. I could live off pizza, mac n cheese and tacos if my waistline would let me. But let’s be honest, that’s not realistic. I also don’t want to raise a child who’s as picky as me (because to many people’s surprise, being picky isn’t actually fun). So, this summer I’m trying to branch out and try a few new recipes. Usually when I try something new, I often end up liking it. So today I’m sharing 10 summer recipes on my meal plan for this season. Fair warning, they’re still recipes for a pickier palette.
This Instant Pot Mac and Cheese recipe from Gimme Some Oven sounds simply amazing! I’m a huge fan of my instant pot but haven’t used it but for a few recipes (shredded chicken, taco casserole and chicken enchilada soup are on heavy rotation). It’s the perfect kitchen appliance to get for summer because it doesn’t heat up the whole house while using it like an oven does.
Apple Peanut Butter S’mores Pizza from the Picky Palette would be perfect for a summer barbecue. With only a handful of ingredients, this is a recipe that I can see Ivy helping with.
I honestly salivate every time I come across this Steak Tips Hash recipe from PaleOMG. I’ve had this saved on my Pinterest board, and on my Instagram “recipe” saves for quite a while and always forget to give it a try. Summer always brings out all the snack-y foods, so this one is a good break from that. And besides dicing the meat and veggies, there isn’t a lot of prep that’s needed. The only downside is the recipes calls for it to be baked in the oven. I’ll have to give this a try on a cooler day.
I love pasta but I try to limit how much I eat of it (because when I do make it, it’s like go big or go home). This Chicken Broccoli Pasta with Bacon recipe from Julia’s Album is adds a good amount of protein and veggies to the pasta dish, making me think I’ll feel less glutinous after eating it. It’d be a perfect dish to try if you have some leftover chicken breast for a night of grilling out.
For a healthier option, these Loaded Sweet Potato Nachos from Hannah Magee RD look ahhh-mazing! I’m a sucker for nachos, and love sweet potatoes, so this recipe is right up my alley… even as a picky eater.
I’m always looking for quick and easy recipes to try, and summer is often when I need it the most. This Shredded BBQ Chicken Casserole recipe on the Easy Family Recipes blog lives up to the blogs name. I often make a batch of shredded chicken in my instant pot that I can use for several recipes or freeze. If I don’t have any on-hand, Sam’s Club or Costco have their rotisserie chicken for cheap that could come in hand for this recipe.
You know how I said earlier that I love recipes that don’t involve turning on the oven? Well this Breakfast Potato recipe on A Beautiful Mess is for the air fryer! I wonder how they’d turn out with some added bell peppers? I’ll give it a try and report back 🙂
One of the items on our summer bucket list is to make homemade ice cream, and I think this Homemade Marshmallow Ice Cream recipe from Julie Blanner is one we’ll try. With only three ingredients, and no need for an ice cream maker, it’s definitely a recipe I can make with Ivy.
Ok, so I know this isn’t a food recipe, but it’s such a fun summer drink that I felt it needed to be added. The Mermaid Water Mocktail on My Heavenly Recipes is a fun drink for kids and adults alike! Ivy loves mermaids right now so I know she’d go crazy if she got to drink this one up! I’m also wondering if it would work to add some vodka or Malibu rum to the drink for adults to enjoy.
Italian pasta salad is one of my go-to recipes for summer. It’s a staple item for every barbecue we host or attend. But I’m always up for trying other pasta salads and this BLT Pasta Salad on Life In The Lofthouse looks scrumptious. I actually am not a huge fan of some of the ingredients on the list (remember, picky eater), but would definitely give this one a try!
